Quinoa-stuffed Bell Peppers
These colorful bell peppers are stuffed with a flavorful mixture of quinoa, vegetables, and spices, creating a wholesome and satisfying meal. The combination of fluffy quinoa, crunchy veggies, and aromatic herbs makes this dish a delightful choice for a nutritious dinner.
Ingredients:
- 4 bell peppers (any color)
- 1 cup cooked quinoa
- 1 small onion, diced
- 1 garlic clove, minced
- 1 cup diced tomatoes
- 1/2 cup corn kernels
- 1/2 cup black beans, rinsed and drained
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- Fresh cilantro, chopped (for garnish)
Instructions:
- Preheat the oven to 375°F (190°C). Slice off the tops of the bell peppers and remove the seeds and membranes.
- In a skillet, heat some olive oil over medium heat. Sauté the onion and garlic until fragrant and translucent.
- Add the diced tomatoes, corn, black beans, cumin, paprika, salt, and pepper to the skillet. Cook for 5 minutes, allowing the flavors to meld together.
- Stir in the cooked quinoa and mix well. Adjust the seasoning if needed.
- Stuff the bell peppers with the quinoa and vegetable mixture, packing it tightly. Place the stuffed peppers in a baking dish.
- Bake for 25-30 minutes until the peppers are tender and slightly charred.
- Remove from the oven and let them cool for a few minutes. Garnish with fresh cilantro before serving.
